This is the very 1st thing I ever made in my Instant Pot.
30 minute ORANGE CHICKEN
Prep time: 15 minutes - Cook time: 15 minutes
Ingredients: 1 double pack of skinless boneless chicken breasts
1 c. orange juice, 1 Tbsp. fresh grated ginger, 6 garlic cloves (minced), 1/4 c. sugar, 1/4 c. brown sugar, 1 Tbsp. sriracha sauce, 1 Tbsp. wine,
1/2 C. tomato sauce, 1/4 c. soy sauce, zest of 1 orange, green onions.
The Slurry Mixture: 2 tbs orange juice & 2 tbsp corn starch
This recipe is totally customizable. I am gluten-free so I don't use soy sauce. I use Worcestershire Sauce instead. And if you don't want sugar. Don't put it or substitute with what you do use as a sweetener. Don't want alcohol? I make this wonderful dish without the wine and its just mouth watering!
Saute chicken breast chunks in skillet.
INSTANT POT - add all ingredients together except the slurry mixture and green onions.
Set IP to Manual 5 minutes high. Vent-closed
Natural Release: 10 minutes
Release any remaining pressure manually to make sure all pressure is released before you remove lid. Turn off.
Set to Saute'
In a bowl make your slurry. This is what is going to thicken it and I refer to as the magick!
Make sure to mix well until you have no clumps.
Add to Instant Pot and gently stir until thickens a little.
Set Instant Pot to Simmer for 3 minutes.
Let stand for about 5-7 minutes.
Garnish with my orange zest and green onions.
